Starch Acetate is a food additives with E number: E1420.

 


Through esterification, starch acetate creates a slight repulsion between starch molecules. Consequently, under temperature fluctuations, the reaggregation forces between the molecules are reduced, thereby stabilizing product quality and extending shelf life. 

Furthermore, its increased hydrophilicity enhances starch gelatinization and dispersion, resulting in a transparent and smooth starch paste. 

These properties make starch acetate suitable for use in low-pH environments, where transparency and a smooth texture are crucial.
